Oven Temperature Uneven

Hot spots, undercooked centers, or an oven that will not hold the set temp

An oven that browns one side of a tray while leaving the center raw — or swings wildly above and below the dial setting — is a frustrating San Francisco and Bay Area cooking call. A drifted temperature sensor, failing bake element or igniter, stalled convection fan, or warped door seal can all spoil weeknight dinners without a total “no heat” failure. Some variance is normal; large, repeatable hot spots usually need diagnosis.

Common causes (high level)

Uneven baking is not always “time for a new oven.” Many Bay Area wall ovens and ranges drift because the sensor reads wrong, one element is weak, the convection fan no longer circulates, or the door gasket leaks heat at a corner. Gas ovens add igniter strength and bake-burner issues. If the oven stays truly cold, use the no-heat guide first.

  • Temperature sensor out of calibration or touching the wall
  • Weak bake or broil element (electric) or weak oven igniter (gas)
  • Convection fan that does not run or runs noisily
  • Door gasket gaps, hinges that will not close, or glass packs that leak heat
  • Control board that mis-cycles elements after a power blip
  • Blocked vents or foil on racks that upset designed airflow

Safe checks you can do before calling

Observation only — gas valves, orifices, and live 240V panels are technician territory:

  • Bake a simple test (cookies or a flat tray of biscuits) on the center rack; note which side browns first.
  • Confirm you are not covering racks or the floor with foil in a way that blocks vents.
  • Inspect the door gasket for flattened or torn sections; wipe crumbs from the seal.
  • Listen for the convection fan on a convection bake setting if your model has one.
  • Note any error code on the display and whether broil still works when bake seems weak.

Do not bypass door locks on self-clean models, prop a gas oven door open as a heat “fix,” or pull a wall oven from the cabinet alone on a 240V circuit. Gas odor → leave the area and contact your utility or a pro. Electric range panel work is not DIY.

When to call for oven repair

Call when food repeatedly burns on one side and undercooks on the other, an oven thermometer disagrees with the set point by a wide margin, convection never runs, the door will not seal, or codes return. Truly cold ovens should follow oven not heating. Appointments run Monday–Friday, 8am–5pm.
